fresh Brussels sprouts
1/4 cup (chopped)
dates
1/4 cup
Manchego cheese
1/4 cup
raw almonds, chopped
Dressings
1/2 cup
extra virgin olive oil
1/2 cup
lemon juice
2 Tbsp.
shallot, minced
1 Tbsp.
honey
1 Tbsp.
Dijon mustard
Directions
  1. In a small bowl combine lemon juice and shallots
  2. While lemon juice is breaking down shallots, use a food processor to shave Brussel sprouts
  3. Add Brussel sprouts to large bowl
  4. Whisk honey and Dijon into bowl with lemon juice and shallots until emulsified
  5. Add to Brussel sprout mixture in large bowl
  6. Combine and enjoy!
