Pineapple Skewers with Lemon Yogurt

Ingredients

fresh pineapple, cored peeled and cut into cubes
3 tablespoons
lemon juice
1 6oz. container
low fat vanilla yogurt
1 teaspoon
fresh grated lemon peel
Granola or toasted coconut
Directions
  1. Spray cold grill rack or grill pan with nonstick cooking spray.
  2. Preheat grill to medium heat.
  3. Thread pineapple cubes on small skewers.
  4. Drizzle with 2 tbs of lemon juice.
  5. Combine yogurt, remaining lemon juice, and lemon peel in small bowl.
  6. Cover and refrigerate until serving.
  7. Grill skewers 6-8 minutes or until browned, turning occasionally.
  8. Serve with lemon yogurt and top with granola or coconut.
