Ingredients

1 teaspoon
olive oil
1 clove
garlic clove, minced
3 ounces
shrimp (about 3-4 shrimp)
1 1/2 cups
mixed vegetables, chopped (opt for sturdy veggies like broccoli, green beans, and carrots)
1 teaspoon
miso
1/2 teaspoon
sesame oil
1 teaspoon
soy sauce
1 tablespoon
green onions, sliced
Directions
  1. Heat olive oil in a large pan over medium-high heat. Sauté garlic until tender, about 1 minute. Add the shrimp and sear, about 1 minute a side. Remove the shrimp and save for later.
  2. Add the vegetables, miso, sesame oil, and soy sauce and cook until the vegetables are tender, about 5 minutes. Add the shrimp and cook until done, about 3 more minutes. Toss with green onion and enjoy.
  3. Handy Hint: To decrease cooking time, splash a tablespoon of water into the pan when you add the vegetables and cover with a lid. The water will steam the vegetables and you should cut cooking time down by 2 minutes. Remove the lid when you put the shrimp back in.
