Sweet Potatoes and Brussels Sprouts Salad

Ingredients

3 medium
sweet potatoes (cut into 1 inch pieces)
12 oz.
Brussels sprouts, trimmed, halved
1/4 Cup
olive oil
3/4 teaspoon
sea salt
1 teaspoon
Sugar
1/2 teaspoon
black pepper
Directions
  1. Preheat the oven to 400˚ F.
  2. Toss sweet potatoes and sprouts with oil and salt, and spread on large rimmed baking sheet.
  3. In a medium mixing bowl, combine the oil and roast until tender (approximately 25 minutes).
  4. Whisk together vinegar, sugar, remaining salt and pepper.
  5. Toss with vegetables. Enjoy!
