Ingredients

plum tomatoes, sliced thickly
1 tsp
olive oil
1 egg white or 1/8 cup
egg white
4”
whole grain baguette
2 Tbsp
avocado
1/4 cup
any greens (we used watercress)
2 slices
turkey bacon, cooked
Directions
  1. Preheat grill pan or grill. Brush tomato slices with oil and season with salt and pepper. Grill for 2 to 4 minutes or until slightly caramelized. Set aside.
  2. Heat a pan on medium and spray with olive oil. Add egg white and allow to set for 30 seconds. Flip over and scramble the egg whites with a spatula. Set aside.
  3. To assemble: Toast bread, if desired. Spread avocado onto baguette with a butter knife. Add tomatoes, eggs, greens, and turkey bacon, and serve.

Tip: Replace mayo with creamy avocado for a healthier spread.
