Beet, Kale, and Kohlrabi Salad with Grapefruit Vinaigrette

Directions
  1. Chop kale and lettuce into bite-sized pieces.
  2. Chop kohlrabi, beet and carrots into matchsticks.
  3. Cut the grapefruit in half. Peel and remove sections from 1/2 of grapefruit.
  4. Place vegetables on serving plate.
  5. Combine juice of the other half grapefruit and the remaining ingredients in a small mason jar. Cover jar and shake vigorously.
  6. Place all ingredients into large serving bowl. Mix in vinaigrette and top with pepitas.
