zuccini, diced (can substitute with cucumber)

white onion, diced

Roma tomatoes, diced

jalapeño pepper, deseeded (optional)

garlic clove, minced
1/4 cup
fresh cilantro or parsley, chopped
1/4 cup
lime juice
dash
salt
Directions
  1. In a large bowl, mix together zucchini, onion, and tomatoes.
  2. Add in jalapeño, garlic, lime juice, and salt.
  3. Serve with whole grain pita chips or in a wrap.
