Ingredients

1 and 1/2 cups
whole grain flour
3/4 tsp
baking soda
1/2 tsp
baking powder
1 tsp optional
cinnamon
1/4 tsp optional
nutmeg
1/4 tsp optional
salt

eggs
1/4 cup
olive oil
1/4 pure dark
maple syrup
1/4 cup
brown sugar
1/2 tsp
vanilla extract
1/4 tsp
almond extract
1/2 cup fresh or frozen
mango
1/4 cup fresh or frozen
blueberries
1
ripe banana
1 heaping cup
raw spinach
Directions
  1. Preheat oven to 350ºF; line muffin tins with liners.
  2. Sift flour into a medium bowl. Add baking soda and baking powder. Add cinnamon, nutmeg, and salt, if using. Mix ingredients together using a whisk.
  3. Add eggs, oil, maple syrup, brown sugar, vanilla extract, almond extract, mango, blueberries, banana, and spinach to food processor; blend until mixture becomes a liquid.
  4. Pour liquid mixture into flour mixture. Fold until combined.
  5. Scoop batter evenly into muffin liners, about 3/4 full.
  6. Bake for 18-20 minutes, then check with toothpick in the middle to make sure muffins are baked completely.

Tip: If desired, top each muffin with fresh blueberries before baking.
