Ingredients

light butter
1 cup
onion, finely chopped

garlic cloves, minced
1 (10-ounce) package
frozen spinach, chopped, thawed, drained, and squeezed dry
1 (8-ounce) can
sliced water chestnuts, drained and coarsely chopped
1 (14-ounce) can
artichoke hearts, drained and coarsely chopped
1 (8-ounce) block
1/3-less-fat cream cheese, softened
1 (8-ounce) carton
reduced-fat sour cream
1 cup (4 ounces)
reduced-fat cheddar cheese, shredded
1 teaspoon
hot sauce
1/2 teaspoon
salt
1/4 teaspoon
black pepper
coat baking dish

Directions
  1. Preheat oven to 350°.
  2. Melt butter in a large nonstick skillet over medium heat. Add onion and garlic; sauté 5 minutes or until tender. Add spinach, water chestnuts, and artichokes; sauté 2 minutes. Add cream cheese, sour cream, 1/2 cup Cheddar cheese, and next 3 ingredients.
  3. Spoon into an 11 x 7-inch baking dish coated with cooking spray. Top with remaining 1/2 cup Cheddar cheese. Bake at 350° for 18 to 20 minutes or until thoroughly heated. Serve with baked tortilla chips.
