Sweet Potato Bites with Goat Cheese

Ingredients

large sweet potatoes, cut into chunks
1-2 tablespoon
olive oil
5 oz. room temperature
goat cheese crumbles
1/3 cup
chopped pecans or walnuts (optional)
1/3 cup
dried cranberries
(or Balsamic reduction)
honey
Directions
  1. Preheat oven to 425 degrees F. In a large bowl, add sliced potatoes, oil, salt and pepper. Toss to coat. Lay prepared potatoes on a large baking sheet. Bake for 8-10 minutes on each side or until golden brown. Transfer to serving dish and top with goat cheese, nuts and cranberries. Garnish with honey or balsamic glaze as desired.
