- Preheat oven to 350°F. Lightly grease a 9” x 5” loaf pan with butter or oil and line with parchment paper. In a medium bowl, use a large mixing spoon to cream together sugar and butter until fully combined.
- Stir the applesauce and eggs into the butter mixture until thoroughly combined, about 5 minutes. Add flours, baking powder, cinnamon, and salt and stir until just combined. Fold the apple slices into the batter and if you desire, reserve a couple slices to place on top of the loaf. Pour the batter into the prepared pan and press the reserved apple slices onto the top of the cake for a pretty (and easy!) decoration. Bake until the top is golden brown and a tester in the center comes out clean, 55 minutes to 1 hour. Let cool completely in the pan before turning out.
- Handy Hint: To ensure that the apple slices don't sink all the way to the bottom, reserve a tablespoon of white flour to toss with the slices before they're folded into the batter. The flour will adhere to the batter while baking to keep the fruit from falling.
