No-Bake Chocolate Almond Treats

Ingredients

2 tablespoons
Sugar
¼ cup
almond milk
¾ cup
almond butter
½ teaspoon
vanilla extract
1 scoop
stevia powder
⅛ teaspoon
sea salt
3 tablespoons
chocolate protein powder
1¼ cups
rolled oats
3 tablespoons
mini chocolate chips
⅓ cup shredded
toasted coconut
Directions
  1. In a small saucepan, combine sugar and almond milk over medium heat, stirring occasionally. When mixture comes to a boil, remove from heat. Cool 5 minutes, then stir in almond butter, vanilla extract, stevia powder, and salt. Transfer to large bowl. Add protein powder, oats, and mini chocolate chips and mix thoroughly with wooden spoon, using hands if mixture becomes too thick for a spoon. Using a tablespoon measure to form heaping tablespoons of the mixture, form 24 balls. Scatter coconut on plate and roll each ball through the coconut to lightly coat. Place balls on baking sheet lined with waxed paper. Refrigerate until firm, at least 2 hours.
