Ingredients

1 cup
unsalted, shelled pistachios
8
pitted medjool dates
1 teaspoon
vanilla extract
Splash of
water
Dash of
salt
1/2 cup
semisweet chocolate chips
1/4 cup
almond milk
1 tablespoon
coconut oil
Directions
  1. Food process pistachios until they are course and ground.
  2. Add dates, vanilla, water, and salt. A dough will begin to form.
  3. Roll into balls and freeze for about 20 minutes.
  4. Melt together chocolate, milk, and oil in a a small saucepan.
  5. Once melted, dip balls using a fork and set them on a lined baking sheet. Freeze for another 20-30 minutes and enjoy!
