- Preheat the oven to 400˚ F.
- Toss sweet potatoes and sprouts with oil and salt, and spread on large rimmed baking sheet.
- In a medium mixing bowl, combine the oil and roast until tender (approximately 25 minutes).
- Whisk together vinegar, sugar, remaining salt and pepper.
- Toss with vegetables. Enjoy!
