Ingredients

flatbreads
2 tablespoons
olive oil

part-skim mozzarella cheese, shredded
1/2 cup
Parmesan cheese, shredded

eggplant, sliced

zucchini, thinly sliced

red onion, sliced
1/4 cup
fresh basil, minced
Directions
  1. Preheat oven to 350 degrees F.
  2. Place the flatbreads on a baking sheet. Brush lightly with olive oil. Top with mozzarella, Parmesan, eggplant, tomatoes, zucchini, onion, and basil.
  3. Bake 6 to 8 minutes, or until flatbread is heated through.
