Mediterranean Bean Salad

This salad is easy-to-make, heart-healthy, diabetic-friendly, and a great source of fiber!

Chickpea Bean & Feta salad

Ingredients

Salad
1 can
chickpeas
1 can small
white beans, rinsed and drained
1 cup (~1 pint)
grape tomatoes, halved
1 cup (~1 medium)
yellow bell pepper, chopped
1/2 cup
pitted kalamata olives
1 cup (~1 small)
red onion, minced
1/2 cup
parsley, chopped
1/4 cup
fresh mint, chopped
1/4 cup
dill, diced
1/2 cup
feta cheese
1 cup (~1 medium)
cucumber, chopped
Dressing
1/4 cup
olive oil
2 tbsp
red wine vinegar
1
lemons, juiced
2 tsp
garlic powder
Directions
  1. Drain and rinse chickpeas and all beans, add to medium bowl.
  2. Wash and cut tomatoes, add to bowl.
  3. Mince onion, add to bowl.
  4. Drain olives, slice and add to bowl.
  5. Rinse and chop herbs, add bowl.
  6. Cut feta and add to bowl.
  7. Make dressing: Combine all ingredients in small bowl and whisk until dressing thickens (emulsifies).
  8. Add dressing to salad and mix until combined.
  9. Plate and Enjoy!
