- Coarsely chop cauliflower. Set aside.
- Combine egg and egg whites in a small bowl, beat with fork.
- Heat a large sauté pan over medium heat.
- Add sesame oil and sauté onions, scallion whites, peas, carrots and garlic . Cook until onions are translucent and soft.
- Add cauliflower ‘rice’. Mix and cook for 5 to 6 minutes, stirring fre-quently.
- Stir in eggs. Cook for 2 to 3 minutes or until eggs are done.
- Dress with soy sauce and top with scallion greens.
