Ingredients

1.5 cups
low sodium vegetable broth
1/4 cup
lemon juice
3/4 cup
quinoa
2 tablespoons
olive oil
1/2 cup
fresh basil leaves, chopped
2 tablespoons
parsley, chopped
Dash
salt & pepper
Directions
  1. In a medium saucepan, boil broth, 2 tablespoons lemon juice, and quinoa. Reduce heat and simmer (covered) for 15 minutes.
  2. In a small bowl, mix together olive oil, remaining lemon juice, a!nd herbs/spices. Pour dressing over quinoa and toss to coat.
