- In a medium, greased, skillet, sauté tofu cubes over medium heat until golden brown (about 7-10 minutes).
- Soak rice paper wrappers in hot water until pliable. Drain on towels.
- Top rice paper wrappers with lettuce, carrots, tofu, peppers, peanuts and 2 teaspoons of dressing. Wrap tightly and serve.
