Ingredients

1 tbsp (canola oil or)
vegetable oil

medium onion, chopped
1 lb
dried lentils, washed and picked over
8 cups
cold water
1 tsp
salt
1/2 tsp
black pepper
1 tsp (dried oregano or)
fresh mint, chopped

bay leaves
1/2 tsp
cumin
1 can (4 oz)
mild green chiles, drained and chopped
1
chopped red bell pepper
1
medium carrots, trimmed, peeled, diced
1/3 cup
lime juice
Directions
  1. In a large saucepan, pour in the vegetable oil and sauté the onion.
  2. Add lentils, water, salt, black pepper, mint, bay leaves, and cumin, then bring to a boil over moderate heat. Lower heat, cover, and simmer, stirring occasionally, for 30 minutes. Add more water as needed.
  3. Add the green chiles, red pepper, and carrots; simmer 15 more minutes, or until the lentils are very soft.
  4. Before serving, remove and discard bay leaves and stir in the lime juice.
  5. Serve hot and enjoy!
