Warm up this winter with a hearty and delicious lentil soup full of different colors, textures and unique flavors.
- In a large saucepan, sauté the onion in 1 tbsp. vegetable oil
- Add lentils, water, salt, black pepper, cumin, chosen seasoning and bay leaves, then bring to a boil over moderate heat. Lower heat, cover and simmer, stirring occasionally, for 30 minutes. Add more water as needed.
- Add the green chiles, red pepper, and carrots; simmer 15 more minutes, or until the lentils are very soft.
- Before serving, remove and discard bay leaves and stir in the lime juice.
- Serve hot and enjoy!
