Ingredients
Salad Ingredients:
1 and 1/2 cups
cauliflower
1 and 1/2 cups
broccoli florets
1/4 cup
small scallion, finely chopped
1/2 cup
red bell pepper, chopped
1/2 cup
yellow bell pepper, chopped
1 cup
shredded red cabbage
1 cup canned
chickpeas
1/4 cup
basil leaves
Dressing Ingredients:
1/4 cup
avocado oil
2 tsp
lime juice
2 Tbsp.
apple cider vinegar
1 Tbsp.
honey
1 1/2 Tbsp
fresh ginger root, minced or 1 tablespoon jarred minced ginger
1/2 tsp
kosher salt
Directions
- Wash all vegetables
- Finely chop all vegetables and add to medium bowl
Make Dressing:
- Mince fresh ginger with grater
- Add all ingredients to a small bowl, whisk until emulsified
- Add dressing to salad and mix until combined
